Gruff Goddess Dressing
1/2 cup extra virgin olive oil
juice from 1 lemon
1 Tbsp dijon mustard
1 Tbsp honey
1 tsp sea salt
2 cloves garlic, minced
1/4 teaspoon thyme, dried
1/4 teaspoon basil, dried
1/4 teaspoon Black Pepper
Slice or Chop
1 cup kale
1/2 cup mushrooms
1/2 cup purple onions
1/2 cup cherry tomatoes
1/4 cup yellow pepper
1/4 cup fresh Dill
Prepared Ingredients
1 jar roasted red peppers
1 jar artichoke heart quarters
1/2 cup kalmata olives
1/4 cup capers
1/2 cup crumbled feta
Preparation
Step 1
Place cooled grits in a large shallow bowl.
Step 2
Layer with prepared fresh vegetables and prepared ingredients.
Step 3
Drizzle with remaining dressing and toss.
Step 4
Top with crumbled feta and enjoy!
